Truly delicious and comforting ribs

I have recently found a new love for pork ribs. Where I got it from, I don't know. But this recipe is easy, delicious and so so good, DH was in heaven (so was I. And the cat looked like he thought he could be if we'd just give him a little...). It does take a little while to cook, but because it's easy you can put them on in five minutes and then get on with your day. It's also really very cheap.

For 500g of ribs (enough for two people, but 600 or 700g would have been more generous) I make the marinade with roughly:

3 table spoons olive oil
3 tablespoons tomato sauce
Generous squeeze of lemon juice
1 tablespoon soy sauce
1 1/2 table spoons runny honey
1 small teaspoon chinese five spice
1/2 teaspoon chilli flakes
1 garlic clove chopped (or 1/2 teaspoon easy garlic, which is what I use!).

Mix the marinade ingredients together in the dish you're going to cook the ribs. It should be large enough that you don't have to have too many layers of ribs - more or less single layer is the way to go although I wouldn't get too fussy about it. Toss the ribs in and ensure they're all covered with marinade then cover (with a lid if you can, or tightly with tin foil) and place in a preheated oven at 160 Celcius. Cook for about 90 minutes, turning them over and recoating with the marinade once. Then remove the lid/foil and continue to cook for another 30 minutes uncovered until they are sticky and crispy and delicious looking.

[In summer, I think you could easily cook them for say an extra 15 minutes and then just do the final cooking on a hot bbq instead]
