Can I use fromais frais to make a cheese sauce?

Give it a try - could be quite nice.

I've mixed creme fraishe (sp?) with grated cheese to put on top of a pasta bake or lasagne. Fromage fais is not far off creme fraishe so I reckon if you mixed cooked pasta with grated cheese and the fromage frais it would work. I always add sauteed leeks or blanched broccoli to my macaroni cheese. A teaspoon of mustard also perks up a cheese sauce.
