How long does a lump of parmesan last in the fridge?

Used some parmesan graggiano in a recipe about a month ago and just found the rest of the lump in the fridge. Is in a air free bag, but is it still ususable in a lasagne?

Absolutely. It's pretty much indestructible. It was probably made years ago anyway - good parmesan is aged for ages first.

You can even use it if it's a bit mouldy - just cut off the mouldy bits and away you go.

When I buy it from the Italian market [ponce emoticon], the bloke selling it says 3 months in the fridge and, as Riven says, all eternity in the freezer.

In my fridge, it lasts for months and months. It does get a bit dry but still gets grated onto or into whatever it's needed for.

We buy Gran Padano in kilo blocks when we go to Italy, it lasts forever in our freezer and is a handy weapon when confronting invaders Wink

A good 3 months after the use by date Blush ie have just finished some I bought in Costco last September ie 2009.
