How long would you cook a whole Dover Sole for?

I'm going to pan fry it anf don't want to mess it up. Plus do I cook it on both sides?

Yeah, but someone said keep the head on because the colour of the eyes tell you how fresh it is !

Actually, I asked Dh if he liked Dover Sole last night to which he said, "Yes, if it's cooked perfectly".
