Just been given a tagine - recipes anyone?

Have just been given a tagine. Has anyone got any simple recipes they can recommend to start me off with? It's too big from my oven Confused but I've got a heat diffuser for use on the hob, if that makes a difference to which recipes are suitable.

The hairy bikers did some lovely tagines when in morocco, perhaps the recipes are online?

was just going to post you the exact same recipe. It is amazingly delicious!

I start this off on the hob and then finish it in the oven. Don't know how authentic it is because I made it up but it is v nice.

Slice onions, crush garlic, cut carrots and sweet potatoes on the diagonal into chunks about as fat as three pound coins stacked together. Halve some new potatoes.

fry onions and garlic, then the vege.

Add tsp paprika, 2 tsp ginger, tsp cinammon, s&p. Add scant tablespoon of honey and a couple of chopped fresh tomatoes. Cover with water and a teaspoon of Marigold and cook in the oven for a while.

Add a couple of tins of drained chickpeas, some sliced red pepper, some frozen peas, broadbeans, whatever, plus some fresh mint and flatleaf parsley.

Cook a bit more; adjust spices etc if needed.

Eat with cous cous, pine nuts and loads of fresh parsley and mint.

sounds great - will definitely try Belligerent
