Ideas for tonnes of leftover roasted veg? Soup?

DP makes the most divine roasted veg but has no concept of quantities. As a result, despite gorging ourselves last night, there's a huge pile of squash, sweet potato, red onion, potato, red and green pepper, parsnip and garlic in a honey glaze left looking forlorn this morning. What would you do with it?

Add some to pasta maybe or make into soup with some stock if it's not going to be to sweet.

I would do a hash. Fry up some bacon or sausages (or any meat or no meat) and when started to crisp add the veg. Fry up until the pototoes are nice and crispy.

I had leftover roasted veg soup this very morning Grin so I recommend that. Grin

With really solid brown bread and a wee green salad, that's a good dinner.

Soup it was, with a pinch of curry powder and bread and butter on the side. There's enough for lunch again tomorrow! Like the hash idea though :)

Have some cold in a wrap with hummus or pesto and cheese.

Frittata - chop any huge bits a little smaller then add to beaten egg. Mix in some parmesan and either feta or goats cheese crumbled in.

Start on the hob then finish under the grill. Nice cold for lunches the next day too so you could make two if you really have loads of veg left!
