What to go with stuffed pork fillet?

Have some friends over for dinner on Saturday and am cooking pork fillet stuffed with pancetta and chestnuts etc.

Stuck on what to serve it with - I don't especially like doing stuff at the last minute, so a baked potato dish like dauphinoise would be good, but I fear that would be too rich.

I was thinking some form of greens as well, but not sure what.

Any inspiring ideas please anyone?

Why don't you do potatoes boulangere - less rich because they're cooked in stock rather than cream?

And red cabbage goes really well with pork. Will have a look for some recipes.

I might also do fresh spinach, dressed with a little garlic butter. You'd have to this at the last minute, but it takes only seconds to do.

Savoy cabbage is delicious with pork. Well, I think savoy cabbage is delicious full stop Grin.

There is a potato dish which is like dauphinoise but you cook the thinly sliced potatoes and onions in stock, not cream. Can't remember what its called though.

I'd do some really creamy, smooth, buttery mash and dark leafy greens, like Kale or similar. Not spinach, something more robust.

Ah yes potatoes boulangere sound great. Although mash would also be yum, but I'd have to do that at the last minute, and I did mash for these friends last time....

I think savoy cabbage would be good, but my DH isn't big on cabbage. The pork stuffing has spinach in already gah!!!! I think I will see what looks good greenswise on the veg van this afternoon, thanks all for the great ideas.
