Help! My crackling hasn't crackled... is there anything I can do to save it?

The meat is cooked, so I've taken the skin off in one piece. It's crackled at the edges, but the rest is like old leather. How about if I stick it under a hot grill for a bit?

Damn. Was really looking forward to my crackling Sad

yes it works, stick it back in

(did you salt it and dry it before it was cooking)

Yes, I followed St. Delia to the letter

(don't often cook pork though)

Thanks foxy

I have found that some skin just crackles better than others but sometimes it does need a bit more time in the oven on its own!

hope it works (it has saved a few old leathers for me too, shoving it back in that is!)

Wrap in foil (yes really), and stick under hot grill for 5 minutes, remove foil and put back in for 5, but watch like a hawk so it doesn't burn.
You need the foil to raise the temp of it without it burning, that'll help it crackle quickly once the foil is off.

Do you think very hot oven or very hot grill?

Oven is better if you have the time, less likely to burn.
Grill is quicker, but don't leave it at all.

Ooh that sounds interesting

If I don't come back, it 'cause the kitchen's on fire...

lol

either that or you ate all the crackling Wink

DD still talks about the time I set the grill on fire when she was 3.
I'd have got away with it, if I'd dealt with it calmly, but instead I shrieked, 'eeeee, the sausages are burning, what should I do, oh fuck', and then threw a cup of water into the grill and shrieked some more.

Don't shriek and it'll be fine.

Mugglewump, I salute you and your top crackling tip. It was fabulous, and the kitchen is still intact Wink

(I would have reacted to grill fire in exactly the same manner by the way. I'm not the best person to have around in an emergency)

My tips are fabulous, or I just love crackling!

Yeah, I'm the type of person who deals with an emergency really well, when I think it through the next dayGrin
At the time I shriek and swear.
