Yummy No point soup recipies please.

I really need to get focused and motivated with loosing some weight so it's back to no point soup time! I know soup is genrally about boiling veg in a pan and then blitzing it but I tried this last week with some red pepper and butternut squash and it tasted AWFUL!!!!

So, if you would be so kind please can you post me YOUR FAV recipies so I can pinch them

I've never combined red pepper and butternut, I think with red pepper to you need to raost them first then peel off their skins so have never bothered.

I do however, make a mean butternut squash soup. You fry an onion in a tiny bit of oil without browning it, then add butternut peeled and cut into chunks, sweat for 5 mins then add veg or chicken stock and cook until tender (about 25-30 mins), then blitz and add fresh herbs of choice. I like thyme a lot, so add some just before the stock and some at the end.

I also make carrot soup exactly the same way, substitutinf the butternut for carrot.

You get a purer flavour if you stick to just one veg, apart from the obligatory onion.
