Cooking apples. Looking very uninspiring. Can anyone inspire me?

I've got some larvely home-made custard in the house.

And some pastry in the freezer.

And then these cooking apples.

But I can't think of a really nice apple filling.

Anyone got a mindblowing apple receipe?

The trick I find is to add some cinnamon to the apples.

Do you use the same filling for strudel, applie pie, apple charlotte etc.?

Do you stew them first with cinnamon? And add sugar? Or not?

Apple Charlotte is apples cooked with layers of white sliced bread on top, sprinkled with brown sugar and cinnamon, Delia's recipe

Tarte Tatin is upside down French apple tart,recipe here. It is the nicest apple pudding imo.

I use the same apple filling for apple crumble, charlotte, turnovers etc etc, usually uncooked sliced apples. Sometimes sprinkled with sugar if very sour cooking apples.

I've just made baked apples for tonight's pudding (core, stuff the centre with dried fruit, dark brown sugar and cinnamon, then bake until soft)

I also like apple sponge - sprinkle sliced apple with cinnamon (sugar - optional), put on a topping of cake mixture (2 x eggs, 4oz of marg, sugar, SR flour) sprinkle flaked almonds on the top and bake until risen and cooked through. Lovely with custard.

I cooked that dorset apple bake and it took about 1 and a half hours for the cake to set, what did I do wrong?7
