Can I make fairy cakes (not cupcakes) tomorrow morning for Wednesday morning

Cos it would make my life easier if I can

Also I will be dropping a blackberry in each fairy cake - with no icing - will that work?

& finally adding apple (stewed) & cinnamon to a second batch will that work?

I've only ever added fruit to muffins, I'm afraid, so can't help there.

I wouldn't put them in the cake as they will leach out liquid which will muck up the delicate balance of blahdiblah.

Is there a resaon you're not using icing? Maybe a wee blob in the middle once they are cooked and cooled to get the blackberry to stick on?

In terms of storage keep them in an airtight container they should be fine, unless they are angel cake type ones ( fatless ) in which case you need to eat them on the day.

I think i'd be tempted to make batches of blackberry and apple muffins...you can do these in fairy cake sized tins no problem.

I would be tempted to make the cakes plain. Then on the day of the event, cut off the top and put the blackberry in an indentation. The top pieces could be cut into Wings, if you used a little butter icing to stick them back on.

Easier would be to make muffins, using fairy cake cases. Not the real mini ones... but the usual size as it were. Those could then be simply dusted in icing sugar.

Reduce the temperature a little - say by 10%, so that they don't burn. You may need to experiment... mine sometimes work, and sometimes don't!

Yes, children love to help... any faults can then be blamed to the little helpers.

Just follow the Delia recipe... adapt for the fruit you have. Remember that the mixture is quite lumpy... muffins are simpler in my view than fairy cakes.

fail proof recipes from susan reimer's muffin book...i do blackberry (her summer fruits recipe with blackberries instead) and spiced apple. Have made both this week, v easy!

google susan's summer fruit muffins and you'll get that recipe...if you still want the apple one i can type it up for you but i'm guessing you're sorted by now?
