What do you cook that takes LONGER than thirty minutes?

I keep reading advice that tells me to make "quick" meals that take no longer than thirty minutes. As I do so it occurs to me that, unless it is a Sunday roast, almost nothing I cook takes longer than half an hour. So I am intrigued - what meals would you cook if you had the time?

Everything I cook takes longer than 30 mins.
Two toddlers and potty training makes sure even a quick meal takes ages.
In general though I like cooking so am happy to spend alot of time.

lasagne
shep/cottage pie
risotto
chilli
lots of stuff in slow cooker though they 'do'themselves
