I'm starting to hate cooking, please help me feed my family!

I feel like I spend my whole time thinking about what we're going to eat, shopping for it and cooking the wretched meals - including spending 18mo's short naptimes chopping vegs and doing as much prep as I can.

I'm really fed up with it. But want to feed my kids healthy food. Can anyone help me with some ideas that mean I don't have to cook every day? Or some healthy, super-quick ideas for lazy evenings?

It's so hard to cook anything while 18mo is awake, he's always hanging off my legs or scaling bookcases. Dh works till very late every night.

When I had a job that left me little time for cooking, one of the things I used to do was, on a Sunday I’d cook a batch of casseroles. Fry the onions and meat, divide it between three casserole dishes, and add stock. To one add carrots, to the second add Mediterranean vegetables, to the third add tomatoes & mushrooms.
The carrot casserole would be served with potatoes (use frozen mash) & seasonal vegetables, you could add ready made Yorkshire puddings or dumplings.
The Mediterranean vegetables would be served with rice or couscous.
The tomato & mushrooms would be served with pasta or tinned green lentils.

It meant I could get a hot meal served up very quickly after getting home. Sometimes, I’d make one of them into steak & kidney pie base.
Other quick meals were Pasta carbonara, Pasta Primavera, Pasta Alfredo (chicken in white sauce).
Fish baked in a foil envelope, salmon works well done this way.
Spanish omelette was quick & economical, and I usually had some homemade soup available as a standby.

I used to cook 4 x family portion of something every weekend- after a month (if you continue) that's 4/7 dinners that just need defrosted plus extra veg.
