I opened pack of lamb steaks by accident on Saturday (sell by date is tomorrow) and put them back in the fridge without covering them again. I want to roast them now. Actually I am roasting them now but am suddenly concerned - I didn't think to smell them directly for offness but they didn't seem to smell bad when I was handling them. They looked a little wizened around the edges but no more than you can sometimes get....

Please help! I normally bother dh with this but he is not answering phone. He refuses to get skype for the reason that I will bother him at work at tea time questionning the doneness of sausages.

I think they'd be ok if maybe a little dry.

Meat is hung in the open air uncovered in slaughterhouse fridges for several weeks.

It is only packed in plastic trays etc for supermarkets. Old fashined butchers have everything in a fridge uncovered.

I'm sure they'll be fine - if it was Pork I might be less robust about it but Lamb/Beef is fine IMO

Thanks for the replies.

The food (roasted with rosemary and butternut squash)was eaten which is unusual in itself, so I am glad I was able to give it to them after all!
