I never choose silverside always go for Tospide or rib of beef...roast medium on a bed of sliced onions, leave to rest for 20 mins, slice and serve!

Have had a lovely bit of topside in the slowcooker since 10 this morning, along with potatoes, leek, carrot and onion. Cup of red wine and some beef stock.

It's melt in the mouth- going to serve it with some crusty bread.

Silverside will never melt in the mouth... but the beauty of it is that it is close textured and has good flavour so makes excellent cold roast beef sandwiches Smile
