Diced pork, and peppers - what to do with it ..?

I've got some diced pork out of the freezer. I've got some peppers that want using up in the fridge.. I've got the usual store cupboard stuff.

I'm off to a meeting at 12, will be back about 4:30 (by which time pork will have defrosted, and need to eat by 7 o'clock.

Any ideas please ?

Pork and pepper kebabs, I marinade with BBQ sauce, Mediterranean tomato cous cous and courgettes!

My fave meal. Sounds gross but is lush :)

Sweet and sour. Toss the pork in cornflour, fry, add onions, peppers, a can of pineapple chunks in juice and add tom puree (or ketchup) and some white wine vinegar.

Serve with rice noodles or pasta

Stewed with lots of paprika, to make delish Czech stew.

Brown onion, add meat tossed in flour - don't matter if still frozen, it will thaw soon enough.

Add chopped peppers and stock and paprika.

Simmer or oven for as long as you like.

Serve with rice or noodles.

Stirfry. Marinade the pork chunks for 20mins before cooking in soy sauce/five spice/honey/grated ginger. Delicious.
