beetroot - what's the point?

I've gone and bought some beetroot as I want to let the DC try things I hate.

What do you do with it and how do you cook it (to make it attractive and inviting for toddlers)Confused?

The point is that I can make it into a soup that DS will actually eat!
It's a beetroot and apple soup. The recipe is in a baby vegetarian book but it's basically 2 beetroot, 1 cooking apple, 1 large potato. Simmer in stock until soft, blend, add some apple juice. It's comes out an amazing colour!

I also roast it and have it in salads with goats cheese and bulgar wheat.

Or the recipe that itsjustafleshwound has posted but as muffins rather than a big cake. They are seriously good - very moist and rich but the mix looks horrific. It's all brown and oily with the pureed beetroot mixed in...

Beetroot wedges roasted with whole garlic cloves and fresh thyme.

Just done Nigella's choc birthday cake and it was a resounding flop. I need to either find Jill's or try the beetroot one.

My three beetroot are going to have to multiply somehow to try all this stuff out!
