HELP! I want to make a sauce/accompanyment with these ingredients, come and tell me how

I know what I want just not sure how to do it or how long for.
I was to make something to go with tonights fish, I am doing asparagus separate.

I want to make something with sliced new potatoes, chopped toms, garlic and courgettes so its like a spanish type sauce thing.

Any suggestons? Can I just bung it all in a pyrex dish and shove it in the oven for an hour

I would fry the garlic, sliced pots and sliced courgette fist the, add chopped toms, salt, pepper, a bit to paprika if you have it and a dash of water then pop in the oven.

hmm. if I were doing it I'd saute garlic and chopped courgette, add tin of toms (and glass of white wine probably) and allow to bubble fpr a while, chucking in whatever herbs I had to hand.

I would then cook and serve potatoes separately (I don't much like spuds cooked in a sauce.

However I reckon you could saute potatoes with garlic etc and then bubble with the toms.

No guarantees, but I reckon that would work

It would depend on how cooked your tatties are, if they are cooked all through on the frying then about 20ish mins or the tatties will disintigrate, if they are not cooked through then give them 35-40mins.

unless you are going to have the oven on anyway, I'd do it on the stove top on a low temp, but either way half an hour or so, or longer of you have time - I think with sauc-y thoings the longer they bubble for the better the flavours mature. I might even deliberately make it earlier in the day or the day before and then reheat to let the flavours develop

Definately add onions - I would! - and any other veg you have to hand such as celery or finely chopped carrot
