Grate over the zest of an orange and sprinkle some dried oregano, salt and pepper and then roast at 220c for an hour, shaking it about every so often.
It was so very delicious and, imo, the cherry tomatoes added a certain something when they went all squishy and made a kind of yummy sauce in the tin.
