I want to cook her something really nice with the added bonus of being really healthy for her (!!??). I want to make a special effort for her and cook something really yummy that makes her feel included!
Does anyone have any suggestions?
TIA

i don't think you should eat a pregnant woman. or any person come to that

Ask her if there is anything that she can't face (eg from nausea or whatever), as well as the things she's not allowed to eat - in fact check if she is following all the rules, as some women don't bother with some of them.

Unless you were planning to cook pate followed by shell fish and raw beef and then chocolate mousse for puds accompanied by lashings of booze I doubt she'd feel excluded by a meal. Sweet thought though.
Maybe a nice red wine casserole - something where you get the flavour of booze without the booze iyswim and she will be able to be sure the meat is well cooked.

Yeah definately check if she's really off anything but I reckon something that's not too rich or heavy, but satisfying... like grilled salmon, spring onion mash, peas, and carrots - you could play with the flavours alot with something like that. And an apple and blackberry crumble with greek yoghurt or cream for afters. I'd totally want all of that Grin

fish can be funny though - I'm not very fishy at the best of times but pregnant I would simply have thrown it straight up again!
