I have 2 bags of spinach-what can I make?

I bought a bag of spinach yesterday to put on my pizza. Only to discover that there was already a bag in the fridge.
So what can I make with (nearly) 2bags of spinach?

Spinach and ricotta lasagne

Spanokopitta

Chickpea and spinach daal

chuck it in pasta with some blue cheese, or in risotto

spinach pancakes

You can knead wilted spinach and fried onions into bread dough to make spinach bread. I love it.

Oh no. Once I made spinach and chilli soup-ouch-I would recommend it to anyone with severe constipation its urr effective...

Garlic in pan, with pine nuts and tsp oil - 30sec
Add 1 bag spinach & stir fry - 30 sec

Done.

Have it with what you want. Its lovely as long as you take it out only JUST wilted.

I have mine with noodles and cold chicken

This time though I'm trying to avoid it.

I think I might make a curry.

Does anyone know how long to blanch spinach for before freezing? I think 'blanch' is a bit of a vague term really isn't it?

Creamed spinach with lots of parmesan. Have it with steak and big fat chips.

Soup! You need loads, as spinach disappears as soon as you apply heat. I soften an onion, very finely chopped, add stock and cook a medium potato, whizz it up when the potato's done and then add the spinach and let it sit on a low heat.

My Mum's recipe -
Whizz to a rough paste a mushy pea type mix of spinach and petis pois with creme fraiche, lemon juice, nutmeg and salt/pepper. Its delicious and very good for you. Easily uses a bag of spinach. Lovely as a side dish for fish, grilled meat or chicken etc.

Put it near a saucepan. It will instantly reduce into a tablespoon's worth.

Go for the curry :)

Lentil and spinach curry

2 tablespoons groundnut oil
1 chopped onion
1 crushed clove garlic
200g button mushrooms (halved)150g green lentils, (washed and drained)
1 tablespoon medium curry powder
500g baby spinach leaves - or two bags!
salt & pepper

Heat the oil and brown the onions slightly, add garlic and mushrooms and fry for 5 minutes (Use low heat and stir frequently)

Stir in the lentils, coating evenly and add the curry powder.

Stir to soak up the juices and add water to cover the lentils.

Simmer gently with the lid on for about 30 minutes, until all the lentils are soft, stirring occasionally
(Check after 15 minutes and add more water in necessary)

When cooked, add the spinach leaves, taste and adjust seasoning.

Serve with rice.
