Can I leave victoria sandwich mix sitting around?

I need to make 3 cakes in a week-end shortly due to birthdays, but I only have one tin (and don't want to fork out for/have the room for another). Can I make up a big mix and leave it sitting while I cook them one by one?

It'll be fine if you are baking them one after the other, but keep it in the fridge. It'll only be sat there for a couple of hours at the most.

Thanks. Actually I have 2 tins which I usually halve the mixture into. I guess I could stick one cake into each tin and chop it in half. Gah, hate cooking!

I think due to gluten being left in contact with moisture mix left in the fridge will get a bit thicker
