I feel like a very good, frugal mummy.

1 x Chicken Roast Dinner - enough for 3
1 x family sized Chicken Pie - to be frozen
Boiled Chicken Bones for stock and will make a substantial soup/stew tommorrow, with carrots, leeks, potatoes etc.

Total cost around £7.00.

I am very pleased with myself tonight .

mmmm well done, i do this every week with the chicken but i usually make egg fried rice on the monday, (if most of the roast is gone then you can get away with very little chicken for this one)

Risotto is a good finish up meal from a roast chicken which doesn't need lots of chicken to taste good. Not very authentic the way I make it (fried onions, carrots + long grain rice, hot chicken stock added slowly, peas in at the end plus chicken bits) but it's the only way I can get more than two meals out of a chicken for my hearty eating family of four.

Well done I'm roasting one at the moment with a Nando's medium spice mix on. Salad today Wraps tomorrow and sandwiches inbetween.

Sorry I thought on mumsnet you can make 3 meals for 4 out of one chicken leg. A whole chicken wow at least 10 meals for a family of 6.

I did this too this week - I did pasta on night two and then made a soup on night three.

Can I have extra chufty points for using veg purely from our own garden?
