What about chicken pieces and veg for roasting all in one pan?

Or Nigella's coq au riesling?

Yes, LITR that's kinda what I was thinking about something to make today and chuck in oven tomorrow.
Doesn't nec have to be a roast.
My brain not working v well today.

how about

Lasagne and serve with Salad
Shepherds/cottage pie

or Stew/casserole type things and serve with bread or baked potatoes
e.g. Irish Stew
Beef Casserole or Stifado
Chicken casserole
Lentil and Chorizo casserole

pork shoulder takes ages so you could slow cook that, no faffing around it just cooks away for ages. Sit it on some apples and theres a ready made sauce to go with it.
