anybody got an easy-peasy no bake, no gelatin coffee cheesecake recipe?

Hi,

I have a really easy recipe for a no-bake Baileys cheesecake which also doesn't require gelatin or eggs but I'm bored with it and would like to make it a coffee cheesecake. The plan was to substitute the Baileys with the same amount of powdered coffee disolved in a little warm water BUT I'm a total baking novice and am worried it'll turn out bitter.

Can I do it this way? Is there anything I can add to make it sweeter?

I have enough cream cheese and icing sugar to make a mess of one attempt but if I can get away with it the first time I'd be able to make two!...woohoo Grin

How will a coffee cheesecake taste any different to a Bailey's cheesecake?

You could dissolve the coffee in some warm milk or cream, rather than water, and add sugar to taste, perhaps?

ah it's just you can taste the alcohol in the baileys one, I'd like to get one that tastes like just coffee.
