Aaargh! Need egg recipes for egg-phobic family

We are hen-sitting 8 chickens and after 4 days I have an enormaous egg-backlog. So I need inspiration on WHat To Do With Eggs.

My limitations:
The house we are staying in belongs to a non-cook. Equipment is limited. I have not found a food processor but I could do sponges by hand if I have to.

The kids won't eat egg if it is identifiable. So nix nay to frittattatttaaa or scramblies.

Lord - its just quiche or meringues, isn't it. Sad

fruit bread eg banana loaf, apricot and hazelnut.

You can freeze eggs - separate the yolks and whites and they can be used later for baking.

OK - I'll get onto scones this afternoon. And a batch of fairy cakes. And an onion tart thing for lunch tomorrow.

THis is all feeling a bit too much hard work for a holiday - hence quaking at the thought of challah. Might give it a go at home though - thanks for doing some thinking for me.

Chocolate mousse, any cake you can think of, quiches and tarts, creme au caramel, souffles, you can add eggs to mash potatoes... running out of ideas

Ooh - I could despatch the DD's out to meet the locals and dispense free eggs. Trouble is, they all seem to have chickens too. Every other house has a shedload and an honesty box outside.

Floss - oh yes- they'd spot that and pick it out. Been there, got cross about that.

Maybe I'll just sneak out in the dead of night and bury them in a remote corner of the garden.....

I know it's wasteful, and will be sternly frowned upon, but if we ever have eggs that we haven't got round to using, DH and I like to throw them at the wall in the garden Blush

Bread and butter pudding ? I know you said boak to custard, but I don't think it tastes that custardy

Angel food cake uses loads and loads of eggs - this recipe has 12 egg whites in it.

Fairy Cakes -3 eggs
Carbonara for the kids -3 eggs

And the little fluffy feckers produced another 3 this afternoon.

Current Egg Back Log - 7 eggs

I can't keep up this level of egg-bakery for another ten days.

savory or sweet, cooked in a frying pan?

stir fry - you can get away with one or two eggs on top

Carbonara? Dh and ds1 can go through 5 eggs with that.

Chocolate mousse: Uses 1 bar of chocolate and 6 eggs.

If you do nigella's cloud cake and fill it with mousse rather than cream you can use a dozen eggs.

I have started beating an egg into the white sauce of lasagne when I make it. Makes the white sauce a bit thicker.
