Has anyone got a GREAT recipe for homemade choclate truffles?

I would like to make some as a thank you gift for a friend.

A really simple recipe is needed as I am complete novice a chocolate cooking.

these are great.

I also make them with a sprinkling of sea salt on them. It doesn't sound great, but don't knock it until you have tried it. They are delish!

this makes loads...
28oz good dark chocolate - chopped finely
375g double cream.
a slug of booze, rum, brandy,grand marnier champagne, whatever.

boil cream.
add half of it to your chopped chocolate, stir well.
boil other half then add it to the mix.mix well
add your booze to taste (if required)
let it set in the fridge.
roll into balls.
put back in fridge.
then you can either roll them in a mixture of cocoa powder and icing sugar, or melt some chocolate in a double boiler, dip your balls of chocolate in, using a fork, to coat your truffles, tap to remove excess, then roll them around on a cooling rack to make them nobbly on the outside.
easy, eh?

Sea salt is just a little topping.

I just take a few flakes and sprinkle on top of each one.

250g of good plain choc melted
splash of double cream

Whip with a balloon whisk until nearer the colour of milk choc. Add booze of choice. If adding gin, also add a few drops of angostura and it makes g+t flavour.
