but where?

Dh and I want to return to the UK and open a traditional, top quality free range butcher's shop. Thing is, we don't really know where to try to open one.

We lived in Bristol for many years and don't want to return there. Also, London doesn't need us! Does anyone out there find it difficult to source fabulous meats with friendly advice and service? We are trying to research areas that don't have this sort fo business and there would be interest in it.

I'm going through the list of master butchers from the Guild of Master Butchers, but would love some advice from people who are interested in this.

I'd choose a suburban centre somewhere that's pretty affluent (Home Counties rather than London), has plenty of SAHPs in the vicinity (they have time to browse) and a good passing trade of the BBQ/dinner party crowd at the weekends. I'd be offering on-line ordering, free home deliveries and cookery courses to distinguish you from the supermarkets and make sure you stay open late at least a few days each week.

I'm in Hertfordshire and have an excellent farm shop butcher. The meat is excellent and priced comparable with supermarket 'Finest' level. However, they're out of town, the opening hours don't work if you have a full-time job and they don't deliver.
