Chocolate cookies with melting insides.

2 scant cups sr flour
1 cup caster sugar
1 cup butter
1 tsp vanilla essence
1 tbsp cocoa powder
your choc broken into squares

Blend all ingredients together. Roll out dough fairly thinly on very well floured surface then cut circles about as wide as a small wine glass. Put square of choc on a crile then cover it with another circle and press down round the edges to seal.

Bake on baking parchment on tray, middle oven at about 180-200c for ten mins. Leave to cool on tray. Eat while the choc in the middle is still soft and squidgy. My son would make these every day if I let him.
