Hi if doing the 16:8 fast does it matter what times the fasting windows are? For example is there any difference in fasting between 10pm and 2pm or between 8pm and 12pm?

No it doesn’t matter, it’s just having the longer gap.

Thank you and is there a recommendation of how many days a week to do this for?

I do between 8:45pm and 12:45pm and do it everyday for the most part -- but I'm not a massive fan of breakfast so find it quite easy. Difficultly for me is having no milk in tea or coffee until the 8-hour eating window - but am getting used to it

I think there is some research showing fasting towards the end of the day is more effective as insulin resistance increases during the day and it gets harder to clear glucose from thd blood. Ultimately though you need to do what is easiest for you to stick to and some people do find it easier to skip breakfast so they can eat later in the evening.
