AB Grade 7 or grade 8
Except Improve your sightreading set or ABRSM speciman set.

I know grade 5, 6 pieces could be used for higher grade sight reading, but they will not cover all the requirement,

I would recommend sightreading anything and every thing possible! As far as I know the only other series of sight reading tutors is the 'Joining the Dots' series which unfortunately finishes at Grade 5.

You should cover a range of styles and periods, Bach inventions for example are great for pattern recognition, modern composers for unusual rhythm patterns and for music that may not be easy to 'predict'.

The other thing to think about is doing a lot of accompanying for choirs or instrumentalists - gives great practice in the skills of keeping going!

I would also reccomend sightreading stuff hand seperatly at a higher lesel, so sightreadung the grade 7 or 8 peices you are not doing for example.

DO trinity do a set? Not sure how useful that might be. What about piano duets? Great for maintaining steady pulse, stylistic playing and fun!
