Mother has Korsakoff's - Any HCPs who can help me navigate this?

She's recently diagnosed after a stroke at the end of Nov. Has been in hospital since, then moved to an ARBD specialist care home last week.

There's layer upon layer of awfulness that I'm uncovering about her life in general, but my main questions today are around what the healthcare looks like for her now?
She has a lot of memory issues, it seems that she either has sight problems and/or issues interpreting who/what she is seeing and is refusing most foods.
I think she has lifelong, undiagnosed, mental health issues that have been not been recognised due to being high functioning, well educated and exceptionally good at making people believe what she wants them to. As a result, our relationship has never been great, but I'm willing to support professionals to make her as comfortable as possible.
She's prone to screaming outbursts when she doesn't like something, or will purposefully refuse medication, or get very distressed.
Will this type of care home allow her to stay? And if so, how will she be managed? If they can't keep her there, what happens next?

Her overall health is poor (mobility issues compounded by alcohol abuse, liver disease, diabetes), how long could her body survive this?

I don't know who I'm supposed to talk to about this.

How is she now?

My dad has suspected alcohol related dementia and we are suddenly facing this too
