Simple (one-pot) cookery book for Dad

My elderly father has been ill recently but is now getting back on his feet. He enjoys cooking simple meals (his words, not mine) but has had to rely on ready meals for the last few months. I would like to get him cooking again so can anyone recommend a book for simple tasty recipes (preferably one-pot) that will work for one person, don't involve a lot of fiddly or unusual ingredients (unusual for my Dad means things like root ginger!), and isn't too big and daunting?

Soup, scrambled egg, bake potatoes, cauliflower cheese. Casserole with veg at bottom, meat add beans, chick peas. Curry. Soup can add beans. I tend to make something that will last a couple of days that extra things can be added over the next 2 to 3 days

Delia's one is fun?
