A buyer has just emailed me to offer a buy it now price. I didn't offer it as BIN and am 2 days away from it ending. Is this allowed?

Is there a bid on the item? If not you can apply a BIN price to the listing.
I'd be a bit careful though, have you got a few watchers? They may think they can pay less, or are wanting to purchase outside of ebay.

Yes there are bidders and watchers

As there are bids on the item, then you can't add a BIN price. I would definitely avoid allowing her to buy it now by ending the listing.

I would hold out. I had this happen to me, and it ended up with the person who offered me the BIN price buying the item by placing the winning bid, and she paid more than she originally offered me!
