Daily meal plan for T2 diabetic - what I ate today!

I've seen this done on a few topics now but as a newly diagnosed T2 I thought it might be interesting to share some ideas and thoughts? Basically just post what your meal plan is for the day and inspire each other 😉

Today my plan is:
B - Greek yoghurt, small portion of mixed berries and chopped hazlenuts, cashews and walnuts
L - 1 slice wholemeal toast topped with half an avocado, scrambled eggs and roasted cherry tomatoes
D - Chinese seasoned pork chop with stir fried cauliflower rice and prawns

Waving from the lose7lbs a month thread. Hope all ok - we are missing you on the thread.
Well looking at your post you have well and truly embraced the low carb route!
My plan
Breakfast - hovis low carb toast with butter and Isey skyr yoghurt
Lunch - chicken salad
Supper - not sure possibly stir fry with veg & extra broccoli - not keen on cauli rice Grin
Snacks - 2 big squares of dark chocolate
Yum
Aiming for 15000 steps today!!!

Hello @TheStirrer!! I've bobbed back over to the March thread to show my face :) how is it all going? I had a big gain when I started eating three good meals a day but back on the downward slope now my body is more used to it.

Today is:
B - scrambled eggs and roasted cherry tomatoes
L - prawn salad
D - 2 95% pork sausage, small portion of celeriac mash and tenderstem broccoli

I am good thank you - nice that you are back on the other thread. I am glad you got a diagnosis and at least you know what is wrong and can tackle it. I wouldn’t worry about the initial weight gain - I am sure it will go soon with your change in diet.
I am going down very slowly at the moment but want to lose 6lbs before my my 50th in early May so need to knuckle down and not cheat Grin. I must admit low carbing has been amazing for me but would have been hard if I didn’t like veg!
