Cheap easy fairly healthy meals

Any one got any good recipes.
By easy no more than an hour prep.
I will start
paupers pie
Bacon chunks
carrots
peas
mushroom
onion
dumpling mix
potato
2 oxo cubes
Put bacon chunks, carrots, peas and mushroom In a casserole dish add a layer of sliced potato pour over a pint of oxo water.

Put in the oven for 30mins then add a dumpling pie top.
About 30 mins more in the oven.
Well not overly healthy but not junk food and I like this one because you can just chuck any veg you have in really.
Any more ideas?

I've got a few recipes up my sleeve but for me, it's about being efficient.

The surest way to save cash with food is to waste little. Getting to the point of near-zero waste requires planning. So, once a week, I sit down, write the following lists and have fun:

  • What's in the fridge that needs using?
  • What's in the larder (pulses/pasta/tins etc.)?
  • What's in the freezer?

Then I hit the recipe books/sites and choose 2 or 3 delicious, nutritious, cheap meals that can be batch-cooked and frozen (or preserved in some other way), keeping in mind what needs using up and what needs replenishing.

Those recipes, plus what's already in the fridge/freezer/larder is always enough to to write a meal plan for the week* and we shop according to that.

Our food cost this week was £20 and we've eaten brilliantly.

=== Other tips ===

  • Batch cook and freeze, especially pasta sauces, stews and soups
  • Keep a bag of breadcrumbs in the freezer and some frozen fish. You'll have endless fun making fish fingers/cakes with the kids and they love it!
  • All fruits can be turned into compote in 15 minutes (delicious and lasts for weeks)
  • Cheap meat cuts can be potted (ditto)
  • I don't always stick to the plan. Sometimes I have a kebab Grin
