I want to start cooking more veggie/low meat meals to reduce the food bill a bit. Dh and I are no problem to cook veggie for, but I have 3 young kids and one about to wean and struggling to come up with veggie meals that they will eat, beyond pasta and sauce or jacket potatoes.
A big stumbling block is that one kid doesn't like beans or pulses in any form, so any lentil bolognese, bean chilli's, or even using lentils to extend meat dishes are out (I've tried it, he can tell). They do happily eat vegetables, but the younger ones give a side eye to any meal that looks different/unusual.
No allergies or intolerance. Please help me out with ideas/recipes!
