What happened to the epsilon, zeta, kappa… variants?

Ie. Why have we gone from Delta to Omicon, and missed out the other letters?

It sounds scariest?

Most of them have become obsolete or are still around but relatively unimportant I thought? Then Nu and Xi skipped..

They only skipped Nu and Xi.

Delta kicked their arses & became the totally dominant variant. Until this week.

They haven't been skipped (except Nu and Xi - the former because it sounds like "new" and the latter because it's the name of the Chinese president). They just didn't come to much in the end.
