leave in fridge over night or out? its quite a big un.

only ask cos one year somehow our dying oven only cooked the top half of the turkey. bit paranoid since.

Only need to take turkey out of fridge an hour before cooking to bring to room temp

For turkeys weighing over 4kg, roast for 20mins per kilo plus 90 mins
for smaller birds and turkey joints weighing less than 4kg roast for 20 mins per kilo plus 70 mins

weigh your turkey after it has been stuffed when you are calculating the roasting time as the stuffing will add weight

hth - I've had far too much port and thought I'd do something useful instead of stuffing my face with nuts and raisins!
Merry Christmas!

now you've all got me wondering if I've got my timings right...darn it, am going to go and double check now! Not the best time of night to do so.....feel bit sick after that last After Eight

So is no one like me then...get up, stagger to kitchen, kettle on, oven on, turkey in, make tea, back to bed.

Several hours later when juices run clear, take the bugger out and leave it to rest???
