A friend had some amazing cupcakes at her wedding - they were a Nigella recipe for Christmas cupcakes (they did have ginger in them)- if you google you will find the recipe. Nigella's black cherry and chocolate cupcakes are also divine. Happy Baking.

Thanks. I have found the recipe, but it looks a fairly complicated one. ANyone have anything simpler?

Nigella's sticky gingerbread from her Christmas book is dead easy and very quick. But not a cupcake - make in slab and cut squares.

But I have loads of specially bought cupcake cases - waaaaiiiilllll!

Could try it i guess and cook for shorter time - but might not be as squidgy

Martha Stewart does a nice one. I use chocolate buttercream and use sweets for smiley faces though instead of lemon frosting.

Just put rum in your usual recipe and it will be fiiiiiine.

I added mixed spice to normal cup cake mixture and then added mixed spice to the buttercream. Tasted great.

I used the basic sponge method from this Delia Smith recipe (because it's easy) for cupcakes last week and it worked really well. You could add mixed spice, ginger or cinnamon as GMakes3 suggested instead of the vanilla. You could make a massive batch of buttercream and divide it into three. leave one natural coloured and make the other two red and green. Or, buy some Xmas sprinkles or glitter for the tops.
