mince pie help please!!

I make mince pies every year, but they always look a mess - all the juice from the filling bubbles out over the side and through the ventilation holes in the lid. How do I stop this happening? (have tried putting less filling in, but they look really miserly then!)

I blot the mincemeat with a paper towel so its slightly less liquidy

Wet the edges of the pastry before you press them together.

Instead of a pastry top, make up a crumble mixture adding some chopped hazlenuts if you like them.Delicious

In this house we:

Dip entire pastry lid in milk, put on top of base, press down with egg cup to seal. Doesn't bubble out unless overfilled.

THank you for your replies - have got to do something about it this year - am meant to make them as my contribution towards Christmas at my parents, however 4 dozen mince pies later I usually only have 10 presentable ones to take (all rejects scoffed by me before DH sees them - can't let my domestic godess halo slip )
