any goose cooking virgins this year trying it out? How are you doing it?

I was inspired by jamie of Salivas method of using veges, Ginger etc as trivet...
So am following his method loosely.

We, well not me, are doing Delia's prunes and brandy stuffing I think. Am a bit worried I might not like it but not that worried. Just want the shopping and prep to end now.

AWT was talking about cooking goose on R5 this morning - said expect more than a pint of fat to come off it (keep tipping it away he said, although not down the sink as it blocks them ). He also said not to cover it as steamed goose v fatty and bleurgh. Does that agree with St Jamie's recipe?

I am just going to put in in the oven, uncovered, for about 3 1/2 hours.

No rubbing or anything, stuffing on the side.

One thing I am not sure about is whether to turn it upside down halfway through cooking, I have read this as a tip to drain off additional fat. Anyone trying this?

It is blinking enormous though, hope I like it!
