Freezing carrots?? Anyone??

Was going to try my hand at freezing some carrots today... I Bought a huge bag when shopping yesterday and realised when I got home I already had a huge bag.....of carrots!

Can I parboil them and freeze ready for Christmas?

Yes you can but don't know if they taste that good? could you make some soup with them? Or make mashed carrots, maybe that freezes better?

Definitely. Or if you want to roast them dont bother parboiling them and they turn out lovely.

I bought a little book on correct storage procedures for different veg and froze a huge bag of carrots - carefully parboiling in strips and flash freezing in the coldest part. When I came to use them they were bendy, tasteless and horrible. Would never use them part cooked and frozen ever again. Of course if could have been a lousy batch of carrots or followed the procedure wrong, but still have my doubts. They might have been ok-ish for soup I guess, but not convinced as the flavour seemed impaired.

Personally, if I had too many, I would use them in a big batch of soup and keep the rest cool for use throughout the week. Perhaps make a double/triple quantity of a casserole and freeze half. Just would not ever waste time freezing parboiled carrots to use again. Do you have a relative or good mate nearby that you could give some extra to? Afterall, a huge bag of carrots costs very little money (I paid 88p for a massive bag) and might be more hassle than it is worth, taking up valuable Christmas freezer space.

yes you could be right lemontart, didn't think of freezer space! Soup it might be then...dh will be thrilled , yummy carrot soup for lunch next week it is then!

I did this, and grated them (used a food processor) and put them in a freezer in a bag. Broke off "chunks" of grated carrot to use in bolognese etc....was fine.
