Christmas food to make and freeze

I usually buy a Christmas dinner box where everything arrives frozen and prepped. Thinking of trying to make ahead things myself. Does anyone have any tried and tested recipes for xmas dinner veg / nut roast / desserts that i could make and freeze? And an idea of how long it would keep?

I tend to make most veg from scratch but I do keep braised red cabbage in the freezer

and always have cheese sauce so I can whip up a quick cauliflower cheese.

I use this recipe for stuffing but I roll it into balls because I prefer it crispier and also easier to serve, it last months in the freezer, I usually freeze in a glass tuppaware type container with greaseproof paper to separate the layers so you can get out what you need easily, sometimes I defrost and sometimes I cook from frozen, there doesn't seem to be much difference!

Homemade cranberry sauce, stuffing, pigs in blankets. A friend’s mum literally froze everything from gravy to roast potatoes. No idea what it was like but it didn’t appeal to me.

I always make pigs in blankets and stuffing in advance, and freeze.
Ps in Bs are so quick and easy, not to mention cheaper than buying them - and at least you know the quality of the sausages. I just cut them into 3rds, wrap each in half a rasher of streaky bacon, 2 on a cocktail stick, into the plastic box for the freezer.

Also do parboiled potatoes in advance; some evidence that the freezing process enhances the taste and texture. DON’T roast them and then freeze, just par boil, coat in oil salt and pepper. Freeze. Then tip them into searing hot oven tray frozen.

Stuffing and pigs in blankets freeze well, defrost before cooking. brandy butter also freezes fine.

Yes! I remember watching a tv food programme with a Professor explaining the science about freezing potatoes.

If you have Yorkshire puddings, they can be made and frozen. I normally just make in the morning and then reheat quickly. Saves space in the oven.
