I always buy a cook from frozen turkey and cook it Christmas Eve.
For some reason I just looked at it in the freezer and I recalled the turkey was a substitute they sent and it's cook from defrosted 🤦🏻‍♀️
My quandary is how best to defrost it, it says 48 hrs in fridge, obviously too late now.

Take it out and put it in a cool place, conservatory or similar overnight.

Frozen turkeys take forever to defrost in a fridge, garage or cold place. I'd put it in the roasting dish on the kitchen counter until tomorrow morning or lunchtime (depending on the size), check it's thawed through, then stuff and roast as usual.

Take it out now, leave it on the side in the kitchen. Into the fridge at bedtime.
See what it is like tomorrow morning in terms of out on the side or in the fridge to finish defrosting.

Don't leave it on the kitchen counter. Place in a dish, still in its wrapper, and place it in the sink. Run cold water over it, steady stream/trickle, not gushing.

Stick it in the sink in cold water over night, if not very defrosted by tomorrow morning just leave it in the sink no water

Yes every year. They're proper cook from frozen ones and they're lovely

We have always defrosted ours in the garage, bringing it in overnight if it's forecast to freeze. It's slightly warmer than fridge temperature currently but not dramatically so. We have never had a problem doing it this way for 30+ years

Why would you think a 'cook from frozen' turkey would be different from any other frozen turkey? If you always cook your turkey from frozen (and haven't killed anyone yet), why wouldn't you do it with this one.

I'm pretty easy going about cooking meat from frozen but wouldn't do it if I didn't own a proper digital thermometer probe. As long as the internal temperature is c165F (from memory but check) at the deepest part of the meat (for poultry) it is going to be safe.
