Hit me with your best stuffing recipe for Christmas day dinner. I never feel I've quite found The One!

Make up a packet of Paxo. Cook down a load of onions until sweet and caramelized. Get the nicest sausage meat you can. Squish all three together and bake. It's lush and easy too.

@Chocdown ooh that looks good. Do you really put in the tinned peaches not cut up?! The recipe doesn't say to chop them.

@Wigeon that’s a Jamie special, he squishes it all together with his hands and the peaches break up during the squishing 😂 it tastes the same if you cut them up rather than squishing them, ime 😉

I do this but without the onion and add chestnuts.

Feel I should maybe add the onion but worried about changing what we know now!

What meat are you cooking OP?
TBH, I always pimp up a packet mix 😆
Depending on the meat, I've added prunes, apricots, toasted/slithered almonds, dried cranberries, mince meat, caramelised onions, additional fresh herbs like parsley, thyme, rosemary etc.

i dare say it’s a bit boring, but I always make the same one - fresh sage, onion and sausage meat (squeezed out of ‘best’ sausages), fresh white breadcrumbs, S&P and an egg to bind. It’s very tasty.

@tedlassoforprimeminister this is the nearest I can find - is it something like this but with apples too?

Delia Smiths 18th century chestnut stuffing, I make it every year and everyone comments on how tasty it is, it's not actually Delia's recipe though, she said she found the recipe in an old 18th century cookbook by Hannah Glasse, I'm glad she did because it's so delicious. Make sure you stick to the recipe like glue otherwise you don't get the flavours.

No offence to Wigeon's suggestion for adding apples to 18th century stuffing, but I personally wouldn't because the flavours are so strong in the original recipe.

Parboil arborio rice. Brown some minced pork. Soften some leek and celery, finely chopped. Whisk an egg in a bowl. Mix together in your appropriate proportions with grated apple. Some thyme, some salt and pepper. Add egg in tsp’s (too much is stodgy - you just want to bind).

Use apple juice or cider in the gravy.

It isn't online because it's in the cookery course book. ( my copy was given to me in 1991!)
You mix everything together except the egg, then when it's all mixed thoroughly add the egg to bind it. Put it in a dish and cook in the oven for 40 minutes or so.

Oh interesting, arborio rice in stuffing! I imagine pearl barley might be good too.

I make up Paxo stuffing as usual, but a bit on the sloppy side, crumble in a chicken oxo cube, add some finely chopped onion and beat it through. Then add an egg and beat that through, sprinkle in some extra sage, grease the dish you're using with some oil. Spread out the stuffing and put blobs of butter on the top. Done! Very tasty too!

Someone put a recipe on here a while ago and it got rave reviews. I'm sure that someone even used it as a meatloaf recipe!

Of course now I need it myself (have volunteered to provide stuffing this year) I can't find it!

TINA'S CHESTNUT STUFFING
Chestnuts x 2 pack roughly chopped
Chopped Bacon x 2 packs
Peppers x 3 chopped
Onions x 1 bag pre chopped
Egg x 1 or 2 (to bind)

Chorizo x 1 sausage chopped

  1. Pan fry chopped bacon & chopped chorizo. Set aside to cool

  3. In a bowl mix sausage meat, chopped garlic, breadcrumbs and egg.
  4. Add sprinkle of salt and pepper
  5. Add bacon, chorizo, onion, peppers and chestnuts to the bowl. Mix in with hands until all blended.
  6. Put in oven tin. Greaseproof paper lining helps. Press with fork and score the top.
  7. Bake at 180/200 until top is dark brown and crispy.
  8. Allow to cool then slice. It cuts easier when cold but delicious hot or cold.

It was posted in 2020 so longer ago than I thought!

Mine is similar to @GETTINGLIKEMYMOTHER bit I fry onions in butter, add those, lemon zest, thyme and breadcrumbs to Sausagemeat and chestnuts and bake, it’s lovely!

My Mamgu's paupers stuffing. I've tried to jazz it up a few times over the years but it's always met with complaints.

Breadcrumbs
Onions
Mixed herbs
Seasoning
Melted butter and some relish from the turkey after it's cooked.

Lovely.

I think you will need more stuffing mix.
