What is wrong with my cake!

Hi all

This is the second year I've made a Christmas cake - it's for my friends' parents who I gave one too last year and they loved it, so it's turning into sort of a tradition!

I doubled the recipe as I was making two of them, which I now think was a mistake. Anyway it just seems to be so moist after I've fed it! I made it around 3 weeks ago so it's been fed once. I have cut it slightly to check and it's all cooked through and it does smell good, so I'm hoping I'm worrying over nothing.

My question is to those of you who are seasoned, wonderful bakers - does this sound normal? I'm planning on doing my own marzipan again in a few weeks and that and the jam will 'glue' it nicely in place

If it's cooked through but soft then you've probably over fed it ?
When do you plan to marzipan/ ice it ?

I'd either leave it unwrapped for a couple of days , turn it a couple of times upside down./right way up .
Then if it;s still a bit soft , cut the centre out and make a ring shape ( decorate like a Christmas Wreath maybe )

BTW - home-made marzipan is the only way . Sooo much nicer than anything shop bought .
I use Delias Almond Paste recipe ( there's a raw egg one in the really old book and a newer one with eggs whisked over a bain marie )
I add the lemon juice , Amaretto and almond extract then taste it till it's strong enough ( much more than the recipe)

Any leftover - disc of marzipan, half walnut and cover with dark chocolate Xmas Grin

Ohhh I never thought of a wreath! Thank you! I usually marzipan it around the weekend before Christmas, so I'm thinking maybe only feeding the outside of it going forward, what do you think?

Ohh Amaretto in the marzipan sounds amazing! 🤩 I did an orange peel one last year - I could have quite happily sat and ate balls of it with a cup of tea I definitely didn't purposely make too much so the rest could fall into my mouth 😁
