Recipe for biscuits to use with a shape cut rolling pin

I have a rolling pin similar to these:

I am looking for an easy biscuit recipe to make. Trouble is, the dough needs to be malleable/not crumbly so it can be rolled out, but to barely expand on cooking so the pattern still shows, and to taste nice and not make biscuits that are too rock hard.

Any suggestions?

I have one of those two I was going to use gingerbread. The one you make gingerbread men out of, or marzipan.

Cheat and buy Jusroll.

You can probably use any dough if you had 2 rolling pins - 1 is to roll the dough and this one is to print the design

Do they do biscuit dough?

Basic sugar cookies are good for this, as is gingerbread.

Nigella's butter cut out biscuits from her domestic goddess book would be perfect. They taste nice but keep a really precise shape for cutters.

These hold their shape really well. Make sure to chill before baking.

I can't see Jusrol biscuit dough but there is shortcake dough for tarts. Other brands make roll out biscuit dough.
