I have a rolling pin similar to these:

I am looking for an easy biscuit recipe to make. Trouble is, the dough needs to be malleable/not crumbly so it can be rolled out, but to barely expand on cooking so the pattern still shows, and to taste nice and not make biscuits that are too rock hard.
Any suggestions?
