Ultimate Christmas buffet food

I am going to be hosting approx 20 people over boxing day. I want to make hosting as easy as possible so far we plan on doing some pulled pork, possibly some gammon, Bailey's cheesecake/ or Oreo cheesecake.What do you really look forward to when having a Christmas buffet?

You could also make a Boxing Day pie with leftovers.

After many years of hosting large family events I have realised that less is more on the buffet front.
I used to do loads of different things/mini bits and different salads etc .
I now just do a few things that work well together.
Usually-

sliced rare roast beef with rocket and horseradish mayo
OR
gammon glaze with honey and mustard

Puff pastry flan with pesto,courgette slices ,peas and feta.

Warm Butternut squash salad with vinaigrette

Tomato and onion salad

Chocolate brownies and berries

We did this for the last few years my in-laws were able to travel.
Prawns
Smoked salmon
Ham
Left over turkey
Ditto cranberry sauce and bread sauce
Ordinary salmon
Mushroom a la greque
Salad
Tomatoes
Cucumber
Potato salad
Crisps
Bread sticks
Taramasalata
Tzatziki
Pretzels.

And that was for 7.

Ooh, not pulled pork. It's horrible. Mini pork pies are a better pork option.

Thank you for all ideas, it is a weigh up between lots of things or keeping it simple. The pulled pork will definitely be staying as the family really enjoy it.
