Post-Christmas Brunch ideas

Group of 14 ranging in age from 12 to 81.
Includes 2 vegetarians, 2 who are 90% vegetarian and 2 who eat gluten-free (not celiac)

On the 27th Dec when we are all heading home we want to do a (savoury) brunch buffet prior to departure.

Previous attempts to do this got very stressful as someone decided they needed to poach eggs for everyone to have with avocado but couldn't poach more than 4 eggs at a time. Rather a disaster. So total veto on any egg-related thing that need doing in small batches.

What celebratory nice brunch things can be made in large batches and form part of a varied brunch table that will satisfy everyone?

So far I have bacon brioche rolls and courgette egg & cheese muffins.

Cream cheese and smoked salmon bagels

Mushrooms (maybe in sour cream and chives) on toast for the veggie/veggie-adjacent.
Bacon sandwiches (not brioche) for the meat and gluten eaters.
Egg muffins with ham, shredded courgette, chives etc for the gluten-free.

Selection of juices, coffee, tea.

I'd do what I used to do at the DC's later birthday parties. Get some good quality sub type rolls plus gluten free ones. Tip top quality large sausages (plus veggie ones) and serve like high quality hot dogs. I honestly wouldn't break my back over this and people will want to be getting away. Good on you for wanting to be a good host though.
